I wish I still had pictures, but I'm running a 2.1 head and manifold on my 85 SPG. The intake manifold has noticeably larger ports and runners, but the TB opening and plenum are relatively similar between the two manifolds. Another big plus about the 2.1 manifold is the injector positioning, which moves the injectors' tips out of the the of the intake port, and at a less harsh angle relative to the flow of air.
The head itself is quite different as well. I too have heard that you can get more flow out of a ported 2.0 head because of water jacket placement and wall thickness, but take that for what it's worth-interent buzz. Stock vs. stock, though the 2.1 head has larger ports, and perhaps more importantly, a larger combustion chamber which will lower CR by a few points. Mine's at aprox. 8.5:1, down from the stock 9:1. Clearly better for high boost and longevity.
All in all, it was a good upgrade. Power feels a bit less peaky, winding out a bit further in the RPM range, and that's with the terrible stock intercooler. I'm able to maintain about 17 psi on a cold day, with my 30# injectors and h20, and that's with a stock APC, so the head must've done something.
