Having tried both ways, piece parts and cat back, in the long run cat back is easier. Exhaust work tends to be a dirty job, so do it once and forget about it. The reason that its easier to do cat back is that when the old system comes off, you don't have to worry about refitting parts. Look under the car and see what shape the bolts between the cat and the intermediate pipe, some wrench off some have to be cut. It is possible to put on new pipes using jackstands, its a tight fit.
Just cut it off the remaining pipes using whatever saw that you have and pull it out in a number of pieces. If you have tried to fit a rusty pipe with a new one, you'll only do it once or twice and drive on.
The other good thing is that the stock kits have grooves and pins that allow the pipes to fit together, and you don't have to weld them, clamps will hold it and make it tight.
There are site sponsors that offer free shipping for exhaust kits in the price range that you mentioned. If some of the pipes are good, save them for someone else or as a spare.
There are too many things to fix on a C900, do the job once and try and tackle some of the other tasks.
