No real experience here but my impression is they're usually HEAVILY chrome plated, such that pitting and corrosion of the piston sliding-sealing surface proper is highly unlikely even with long-seized northern rust belt calipers. What does happen is rust transfers from the bore or exterior of the caliper and bonds onto the surface of the chrome. This can be removed.
What you suggest sounds theoretical rather than practical though you might have the skills to do it.
