Thanks to everyone for the great tips!
I pulled the driver's seat, which made things much nicer on my neck, then spent some time carefully aligning the U-Joint to the spline shaft, and yes, it shouldn't seat all the way down, but needs to be slightly lifted.
Then, I could feel the pinch bolt engage, but the threads caught slightly on the spline shaft - With a little persuasion, it went all the way through.
Everything's buttoned up again and tight!
Of course, the Saab continuum being in place, I must pull the knee bolster again to figure out what I bumped to make my cruise control not work <sigh>
