Unless the two tires you compared were identically constructed, i.e., the same brand and model, it's not quite possible to attribute improved handling to the one with a wider section width. There are too many other variables: belt construction, tread shape/width, rubber compound, tire pressure, and age all affect how the tire "feels." (If you got an alignment with your new tires, especially a change in toe, this further complicates things.) If you prefer the feel of the Bridgestone to the Dunlop, it is just as likely that this is because of a stiffer sidewall, softer or merely new compound. Differences are greater especially if you went from a lower-cost, low-speed-rated tire to a pricier, more performance-oriented one. Also, a stated section width may vary in actual measurement by up to 10% in USA, so a "195" may actually measure to 20mm wider (happens often with performance tires).
PS, a 205/50/15 will shorten your gearing and cause your speedo to read falsely high on the freeway (couple mph's). If looks are important to you, the 205/50 will also look a bit small on the car once some of the tread has worn down. A car that isn't lowered looks even worse. There are a lot of tires in this size though, and they are cheap.
