Engine cooling - 2 fans?

I haven't got my Bentley delivered yet so I am not sure what I am supposed to be seeing... Anyway, I was looking at a couple of submissions from others about the fans... Are both fans supposed to be running at once if the thermoswitch is set? I know that one is an AC fan and the other is the regular fan (I think AC is the one on the drivers side) but why wouldn't they both come on together? Is it to save load on the engine?
So in trying to make both come on I started my AC and the fan still would not come on. Is there a way that I can bypass something (like I did with the thermoswitch to check the fan would run before I was up to temp) to make sure that the AC fan is not at fault?
Also - is there a way to check to ensure that a relay isn't bad? (I have already checked the fuses)
And lastly - PCV valve. Nipple broke off the valve and now hose doesn't connect. I have read that I shouldn't plug it as the vacuum is needed. So question - Another maker of PCV valve other then Genuine Saab? Basically what parts are important enough to make sure you use Saab and what parts can be generic?
