It sounds like your thermostat and thermoswitch are doing just what they're supposed to do.
When I was living in the North, the rad fins on my '88 900S became so corroded that the fans couldn't keep up with the heat when we got into summer. After I replaced the radiator, that went away entirely. Here in Atlanta, where it's in the 80s today, the temp has never gone up into the red zone, even when the outside tempo was over 100. Not bad for a 17-year old radiator.
If it gets into the red, then you can worry.
One normal suggestion on the board is that you replace the thermostat if you don't know how old it is. Typically, they're good for around 2 years (and I'm *not* going to say how old the one in my '89 is ;-)
If they fail open, the engine doesn't get up to temp fast enough and, if they fail closed ... well ... you know.
Another suggestion is that you get the 82 deg C thermostat and 82 deg C switch to use on the 900T. That gives a little more headroom to keep up with heat spikes whey you do a lot of high HP driving.
Site sponsors like sobstory.com and eEuroparts.com (to name two of the many site sponsors), have decent prices on parts. But, don't be surprised at the cost of the SAAB thermostat, vs the aftermarket.
You haven't mentioned what year your 900T is but, for most years, the 2nd fan only comes on with the A/C. It can be wired up so that both fans come on together.
