Usually you only need to deglaze the walls. Assuming there is no 'ridge' on the top of the cylinders (if you can feel a ridge with your fingernail you need to use a ridge reamer before you pull the pistons or else the old piston rings can smash the ring lands on the pistons plus the new rings with square upper edges won't seat right on the old ridge). The relatively high nickel content of the Saab cylinder block apparently causes little cylinder wear...the original honing marks were still visible on my 87 when the engine was re-ringed at 192K.
I trust you're replacing the mains and con bearings...corrosion seems to be the main (sorry for pun, couldn't resist) problem rather than mechanical wear.
I've used the 'bottle brush' type of deglazing hone rather than a hone with three stones. The bottle brush type has a range of cylinder diameters it works on and I think there are a couple of sizes so make sure you get the proper size for your cylinders. One manufacturer is Flex-Hone.
