I don't know of a perfect way to remove the plastic pin without losing it! I've heard from an expert Saab dismantler that if you have the door interiors off, you can stick your hand up under the mirror mount and catch the plastic pin about 1/2 of the time!
Best bet would be to buy new fasteners - some really good hardware/fastener stores carry these type of plastic bits.
I've also heard that a piece of coathanger makes an acceptable substitute.
And yes, once you get the trim piece off, the rest is a cake walk.
