Don't confuse mechanical shaking of the needle caused by a shaky idle with a voltmeter needle oscillation caused by voltage variation. The latter is highly unlikely. And from my experience the voltage meters are highly damped anyway...they are not very responsive. See how slowly (or how fast) your meter needle drops to zero when you shut off the engine.
Anyway, try reading the alternator output with a hand held oscilloscope or perhaps a digital voltmeter....unless you're getting a .1v or probably more likley .3v or higher oscillation, your analog voltmeter shouldn't notice it.
You could also manually speed up the engine to around 1K and see if the meter needle evens out...I'll bet it's a mechanical vibration rather than electrical.
In any case, if you don't like the vibration you'll have to figure out what's causing it, a vacuum leak most likely. Perhaps an old/failing IAC motor.
