I would always do the following - even if there is no obvious wear:

o power steering pump mount bushings
o alternator mount bushings
o front and rear seal
o water pump
o head gasket
o transmission input shaft seal (probably in the new transmission already)
o motor mounts

Tim's timing chain suggestion is a very good one - I always check it prior to removing the head for the gasket.

The stuff I gave is around $200 in parts... but there is no better time to replace this stuff than when the engine is out. The head gasket alone takes perhaps an extra hour when the engine is coming off the transmission, versus six or eight hours if you're a pro and it's your only job. Same goes for the alternator & power steering mount bushings - just a couple extra minutes with the engine out, but hours of work otherwise...
