I added an amp to both my SPGs (86 & 91) to power the rear speakers, which I believe makes more of a difference than your head unit, unless you're a serious audiophile. Run your front speakers off the head unit, and select 4" replacements according to the output of the head. Head units have become pretty powerful in the last several years (thumpa thumpa thumpa) Place the amp under your rear seat, and connect to your head w/ RCA cables. Check out crutchfield's explanation of matching up amps w/ speakers and head units. You probably don't need much, perhaps only 65W. My 86 has 6x9 Alpiness in the deck, the 91 has aftermarket 4x6s in factory location, and the amp makes both sound great.
With head units, its really a matter of the features, bells and whistles (does anyone actually use 18 preset FM stations?) I select based on functionality and ease of use while driving--try to be brand blind. Head units are designed for the gimmick-oriented crowd (animation sync'd w/ audio, e.g.) As for mp3, my Alpine has an auxilliary output for dvd players to which I connect my iPod. Most heads will support CDs w/ mp3 files. Again, Crutchfield provides a fairly comprehenisive sampling of features, whether or not you buy from them.
