I'm not sure from reading your post what your problem is, but you can go to a Saab dealer and have them cut you a key for less than $20. They have a book that tells them the key code for every VIN, so all you have to do is give them your VIN and they can cut you a new key for the doors and hatch (assuming that they are still the original locks).
Alternatively, every lock cylinder has the code stamped on the outside of the barrel. So you could take the lock cylinder off the hatch (that is the easiest to get to) and take that to the dealer to have them cut the key.
If you want to have one key for all the locks, then you can go to the car you found and take both door handles, the hatch lock AND the ignition lock cylinder. This is not really all that difficult, I did this for my '85 900T. Getting the door handles back on is a little tricky, but not all that hard and I would reccommend removing the drivers seat to get to the ignition cylinder just because it is really easy to R&R the seat and it makes the job A LOT easier. If you want to do this, let me know and I will explain how to get the ignition cylinder out.
