How do you tell if water pump is bad? Temp gauge ? too

Here's what I've got:
Fans weren't running even when gauge in car says hot. Replaced temp sensor and thermoswitch, and fans still don't run. If I jumper the leads of the thermoswitch, the fans run, so it's not fan electrical. My initial guess is that it is not the new Wahler thermoswitch that I bought, although I haven't temp-tested it yet. It won't run even after 15 mile drive on highway/city mix, after temp gauge has been pegged for a few mins. So for a 70-mile drive I just had from Milwaukee to Chicago, I jumpered to keep the fan on. When I got to Chicago, the hoses were warm but not hot to the touch on the radiator, but the temp gauge in the car is reading H.

Do I have 1 or 2 problems? Here's what I'm thinking.

Option 1 is that the water pump could be going bad, and it is actually overheating, but the hot water isn't getting to the radiator to trip the thermoswitch. If this is the case, how can I tell short of pulling water pump? What am I looking for if I pull the water pump? Would the fins be ripped up/missing/deformed/flat?

Option 2 is temp gauge is bad inside the car. I believe I have problems here also. After car warms up, the temperature gauge continues to climb. Occasionally, it will 'peg' jumping to H. If I hit the dashboard, it will go back to its previous reading. After a few more minutes, it will peg high, and then won't come back when I hit the dash. Could it be that this gauge is bad, and when the cabin is warmed up, it's thermally expanding causing a loose connection? Anyone heard of this, or am I making things up?

How do I check the temp sender? Bentley was a little confusing, if I ground the wire to the engine block, should it peg high or low? Is the temp sender a PTC or NTC - should resistance go up or down with temperature,if I measure it with a meter?

Any other tips/suggestions/ things to look at? Based on above, it doesn't look like electrical for the fan, but could possibly be other wires I guess...
