Factory manual calls out the following:
Oil pump pressure-reducing valve opens at 52-75 PSI
Warning light comes on at 4.4 - 7.2 PSI
Oil pressure at 2000 RPM, engine temp at 176F and 10W-30 oil MINIMUM of 39 PSI.
The note about the 176F as I recall is the temp at which the oil is bypassed to the cooler, so that test must be for a fully warmed engine that is ready to cycle oil for cooling.
If you have never changed your crank pulley, I would say that you have had a very long lived one -- since the pump is in behind the pulley, at this point I would consider it a maintenance item.
I would take Sweed Speed's advice, but before the change in viscosity, you might want to measure the pressure per the manual, and then check it after the higher viscosity oil is used.
Can you check to make sure that the oil is indeed getting to the cooler -- after the engine is fully warmed, see if the cooler feels warmer than the other surrounding structure. Maybe the bypass valve is not sending oil to be cycled through the cooler.
