I would just go through the basic stuff, check your compression well before you go, altohough you should be fine there.
Flush the radiator and colling system and place apropriate anti- freeze/boil for the weather your expecting. Renew the leads - rotor - disi cap if they are old.
Replace your air filter with a K&N or some other reputable hi flow filter, they work better and are cheaper in the long run as you can claen them. I also drilled a couple of extra holes in the air box to make it less restrictive, and this made a smal differece.
Check your vacume hoses system for leaks, this is a big one. I remove each hose individuly and use a bike pump and a golf tee (to block the other end) to make sure each hose holds pressure. The actual act of removing the hoses offten showes up leaks that would be hard to find otherwise, as it forces you to phisicly check every conection, I offten find things like brittle elboes and hoses that are split but look fine.
If your temp is normaly anyware but the middle of the dail change your thermostat.
Run some injector cleaner throuh the system and set the timming before your go.
Plan to do these things a few weeks before you go, this will give any mistakes you make some time to become obvious so you can fix them at home rather then the side of some highway. I know my car is much more likley to have a problem in the next few day's affter I've worked on it (I wouldn't admit it to me wife though).

Good luck and enjoy the trip, Ben.
