I ran into a kind of similar issue, and you're right, it's because the money is in collision repair. I suggest running your car into a tree - that'll take care of that. :)
Seriously, what I found is that the options are the low-budget Earl Scheib/Maaco type of places, or the high-end restoration shops. I have quotes on my 5-door in the $400 range and the $4000 range, but nothing in the middle.
What I got back from a friend of mine that has personally done body work is that, by and large, you can do the $400 paint job and be happy *if* you do all the prep yourself. You gotta remove trim and sand it... the painting part is pretty easy for anyone with reasonable skill.
Honestly, I trust neither the $400 paint guy nor my ability (or availability) to properly prep a vehicle. I'm gonna bite the bullet and buy a $4000 paint job for a $300 27 year old car. Just a matter of choosing which local Italian to paint the thing... Bertolucci's or Pantolini's. Don't ask me why they all have Italian names, but they both have Porsches parked out front glistening, so I've got faith they'll do the job right... :)
