I just finished this on my 89 SPG. Not to bad a project.
Remove the seats(dont forget to unplug as well!).
On the backs, un-zip bottom and work up. You will be turning the leather in-side out. There will a couple of 'hooks' to release and some hog rings to cut as you go(use patiance)
Near the top, you will find a slot in the seat foam, feel in here and you will find the screw that holds the headrest on. Undo, and presto.
The bottom is as simple as well. Removing the plastic seat skirts helps here. Cut hog rings and should come right off.
I took my skins to a leather shop. Costs approx $30 for restitching.
Now is also a great time to check the seat foundation for splitting.

When replacing, borrow some hog-ring plyers or use small zip ties.
