They are just protecting themselves. If they sell you the tires, and you have a blowout and crash, any decent lawyer will sue Tire Rack for selling you tires that aren't right for your car. Is it silly? To a point, yes. But lawsuits like that happen every day, and it's not worth their risk. Will you sue them? Probably not. But they don't know that. And they don't know what your survivors will do should you not make it out.
Just like they won't sell you tires with a speed rating below the rating for your car. Yes, you'd be terminally stupid to drive above the speed rating of the tires for extended periods of time (usually greater than 118 mph or more), but if you did and the car crashed, again, they could be liable.
It should be noted that the load rating and speed rating isn't necessarily a function of tire size, but of a bunch of other things. So I'll bet you'll have no problem getting 205/45-16 with the proper load rating, but you may need to find a different tire 'model' within that brand, or possibly a different tire brand.
