Most likely, it is your radiator cooling fan switch.
If you want to be sure, drive it until it's in the middle range, then pull over and bridge the wires that connect to the switch (with alligator clips on opposite ends of a wire or something similar).
Drive for a while...does the temp gauge go up still, or stay in the middle?
If it goes up, replace your thermostat (with a Saab original part...see other posts for reasons). If it doesn't, replace the radiator cooling fan switch. If one of the two has failed, it does make sense to replace both, though.
The explanation is that when you bridge the wires, you are making your switch stay on and the fan is running. If this can't cool the engine, your problem is further up the line...the thermostat. The switch is just there to bridge these two wires and turn the fan on when the radiator is hot. Bridging them yourself makes the fan do the most it can do, regardless of how hot things get. If bridging these wires can't make your engine cool correctly, you need to look elsewhere.
If bridging the cooling fan switch wires does cool the engine, then your cooling fan isn't coming on when the radiator gets hot, and you need to replace the switch. Basically, in this scenario, the fan is only able to do its job when you tell it to come on, but under normal circumstances it's supposed to do this on its own because of the temperature.
Either way, it's not an expensive fix. Just do please remember that to access either part you have to either spill (bad) or drain (better) a little bit of coolant. If you don't put this back in your car, please dispose of it at a recycling station.
Coolant in your drain goes into drinking water and also kills fish.
