How to tell if water from coolant is causing oil cheese

or if it just moisture from air.
Seems like it only happens every once in a while, but today it had a minor hose leak, fixed it, checked oil and other stuff while under the hood, drove 15 miles, checked oil(everything fine), then drove another 40 and now have that milky 'oil cheese' all around filler cap. This '88 900 Turbo with AT.
Can a shop tell me if the head gasket is just starting to go out?
I normally run the engine at about 90mph on morning commute for about 50 miles daily. Lately it has been showing 3/5 warm and I may need to flush raditor again, or replace it.
Anyone had any luck with that miracle "Head gasket repair in a bottle" stuff?
Shop wants $1500 to do head gasket, car not worth it.
