and you got air coming out of the system like that, then there's an air leak of some sort in the system.
The more likely scenario is that the fluid drained out by gravity while you had the bleeder screw out and you started to pump air. The master cylinder cover has a breather hole in it to keep the pressure inside the reservoir in equilibrium with the pressure outside the reservoir.
The best way to bleed the brakes is with a pressure bleeder so you don't damage the master cylinder seals by pushing them on to rough areas of the master which aren't swept by the seals during normal use.
