Head gaskets aren't so much "crush" gaskets as, made of a slightly-yielding composition that ensures they will conform to any imperfections that DO happen to be in the otherwise smoothly machined surfaces they seal to. Torquing it down, then later disassembling it, doesn't change that yielding quality. And the yielding property of the gasket remains for some time, certainly after a brief startup and quick disassembly. But if it had been on the car for some time, say over a year, or many months, it might have hardened up some, and I wouldn't be so sure about reusing it. Or if it had started to pull apart, with some of it stuck onto the block or the head, then plainly no, don't reuse.
I bet if you had miked the brand new gasket and then remiked after removing it from the car you wouldn't be able to measure a difference. Even if you could, there's still lots more squeeze there in a fresh gasket.
I DON'T think I'd be so sure about reusing a copper head gasket, especially if it had been on the motor for some time. It might look clean but is its entire surface uniform or is it in places work-hardened or eroded?
