The turbo needle should stop at the end of the yellow - ideally, it doesn't go into the red. If the turbo has enough to get the needle to the end of the yellow, it's working.
You changed the spark plugs and wires. Did you check the spark plug gaps before you installed them to make sure they were right? How about the cap and rotor? Have you checked the timing? How old are the fuel and air filters?
How did the old spark plugs look? Did they look fluffy black like the car is running rich, or stark white indicating lean? Lean running could indicate one or more vacuum leaks and/or a clogged fuel filter.
Basically, you want to do a complete tune-up. Don't start looking for serious engine issues if you haven't completely covered all of the easy stuff.
If a complete tune-up doesn't do the trick, I would suspect the AMM (air mass meter). A symptom of a tired AMM is hesitation off the line, then the car seems to jump.
