I did auto-to-manual on my '88 (last year for 8 valve in US) back in 2003. I've had no unusual problems resulting from it since then, over the span of 70k. I think I got lucky since I only had one stuck bolt and it eventually moved. Manual-to-manual is easier. I had done basic stuff (electrical, cooling, brakes, exhausts, normal maintenance, ball joints/suspension et cetera) before but never gone so far as breaking a driveshaft. The only bolts you really have to worry about are the ball joint bolts and the stuff to disassemble the front end.
If you go for it, look in to changing the rear motor mounts (transmission loses fifth if they sag), crank pulley, oil pump and timing cover seals, timing chain guides, pulley-side crank seal, oil pickup tube o-rings, and the dipstick tube while those things are accessible.
I used the opportunity to remove the long-encumbering worthless AC system. It makes your car a heck of a lot easier to work on, not to mention dropping about 55 pounds from the car and giving my allergies the benefit of the cabin filter.
