Interesting... This is the first time I've seen the assertion that above-average height is a factor in 1st-gen airbag injury. The scientific literature is pretty clear that injury is a function of proximity to the bag, and that means, usually, smaller individuals (typically, women and teens), and drivers who sit unusually close to the steering wheel, i.e., ten inches or closer. Peruse the NHTSA website for more information on 1st-gen airbags.
It's unclear whether your comment about about weight savings is serious. The airbag, separated from the steering wheel, weighs perhaps 2 or 3 pounds, or approx. 1/1000th of the weight of the car, or the weight of roughly a 1/2 gallon of gasoline.
If you removed a functional airbag and were to be injured in a collision, my guess is that your insurer (or the insurer of someone who may have hit you) won't be terribly willing to pay for any medical attention you might require.
