with the cold weather the rubber in the dash pot might be hard as a rock restricting the spring in a compressed form which is keeping the dash-pot hard, when the pedal is released the motors rpms drop and when they hit 1000 the dash-pot should grab the accelerator and gently lower the idle to 800 but with it not doing its job the idle plummets to 800 and seeing the drop of the rpms are so significant it will drop to 300 rpm and stall the motor.
when you put the car in neutral your foot can act as a dash pot
watch the rpms drop then when they hit 900 give the motor a little fuel to stop the plummet if you gas it just a bit then take your foot off the pedal the rpm will settle at 800 and wont stall the motor.
