I think there are two clues here. First, that it takes ~45 min of driving to evoke OH symptoms. Of course I don't know what sort of driving you are doing during that time or what ambient temps are, but I would guess that a bad thermostat would lead to that condition in much shorter time. The more suggestive clue, to me (and take those 2 cents at face value) is that the OH condition occurs (only?) when the motor is running but the car isn't moving. If it were mine I'd suspect that the radiator isn't allowing sufficient flow of coolant through the radiator such that a fans-only breeze can dissipate heat load.
It might be an informative experiment to see if turning cabin heat to full blast upon next episode has any lowering effect on temp level. It's not a terribly diagnostic test since any source of poor circulation (i.e., not just the radiator) should be alleviated by doing so...
