Stayfast is what is used on the majority of replaced tops. The German Happach (sp?) canvass is what was originally on there. Only if you're doing a true restoration is it worth it IMHO. I got the German canvass and rear curtain to redo the top on my '94 Comm Ed. In that case I felt it was worth it.
As mentioned, the top and the rear curtain are usually sold separately. The rear curtain is the back flap with the window installed. You cannot reuse your rear glass. You have to buy the whole curtain. The glass is chemically bonded to the fabric at the factory. But... If your rear curtain is in good shape (fabric still bonded to the glass) you can just get the top and a "feature strip". The feature strip is a piece of matching fabric that gets glued on your old rear curtain below the window (the only part visible when the top is up).
If you are having a shop install the top for you, check with them first to be sure they will install a top which you supply. Some shops won't install tops that they don't get from their preferred supplier. They have to warantee the install, and they want to be sure they are getting a quality top that fits properly.
