The fastners are like a heavy-duty plastic enlarged version of velcro. Don't be afraid to just pry the covers off. They will "pop" when the fasteners come apart.
Do your speaker covers have the exposed grill or are they totally covered in fabric? If they are the exposed-grill type, you'll need to work the grill off the melted plastic posts that hold it on from the back. The fabric has to go in the opening first, then the speaker grill goes on. If you have enough post left, you can just re-melt it with a soldering iron or hot knife to hold the grill on. Or, what I've done is drill the posts out, just glue the fabric on the back side of the opening (not on the perimeter) then rivet the grills on (fold the fabric back) then you can lay down the rest of the fabric and glue it on the back. If you use a synthetic fabric, you can actually forget the glue and just hot tack it on the back. Basically, take a soldering iron tip and melt the fabric in spots to the plastic back to hold it in place.
I did this set with black microsuede fabric from JoAnnes:
