Sounds like the hydraulics need to be bled. The factory manual method involves removing the pump, pistons, and hydraulic lines from the car complete, and without separating them. Then you place the pump on a table, the pistons in a turkey basting pan, and cycle the pump back and forth till all the air leaves the system, alternately loosening some of the fittings to get it to flow out.
You really can't do this with the pistons in the car, as a) the pistons are above the pump and b) you'd have a hard time accessing the fittings.
As for oil, look for hydraulic jack oil.
