I'm all for gasket matching and porting and polishing. I just did that with a head on my daily driver 900T--noticeable improvement. I did it years ago on my '94 Comm Ed as well. I also gasket matched and P&Ped the intake and exhaust manifolds. You don't really want to polish the intake, just open it up and leave it a little rough, but you want to polish the exhaust side. One thing to keep in mind if you haven't done it before is to make your porting a smooth transition from head to manifold. You don't want the ports to be narrow and then widen at the gasket. You'll end up with ports that look like a snake digesting a rat--not good for flow.
I would also replace the valve seals, guides should be good on a 64K head. Chuck the valves in a drill and polish any carbon off them. You can also give the valves a light lapping to make sure that they are sealing well. Don't overdo it. They are stelite coated and you don't want to remove that.
I got a head porting kit from Standard Abrasives. They also have a good how-to PDF. If you do a web search on Standard Abrasives head porting I'm sure you'll find it.
