I'm not sure of the insurance regulations in your state, and since this isn't an Auto Insurance claim (it's a Fire Insurance claim) I'm not sure what the regulations are. It might be worth consulting an attorney.
In some states - and in an Auto Insurance claim - you can ask the insurance company to replace the car instead of taking a monetary settlement. Since you are the original owner, you can easily make the case that since it's a one-owner car, you'd like it replaced with a one-owner car. Also, if you have the original bill of sale, make a claim for the original amount you paid. If you have all the paperwork, service records, etc. then any replacement should have all of that as well.
Any receipts for recent work or for any accessories can increase the claim - especially if those accessories are original Saab and no longer available.
I imagine no amount can compensate you, but good luck and I hope for the best.
