I'd bet money on the radiator... I have 2 low miles 900s + both of them needed new rads (to replace originals) within the last couple years (both were on 82 degree t-stats + merc coolant etc prior, but only for a couple years in both cases)... overheating in traffic on hot days - not to max, but close enough that it was concerning (eg 80%)... I wired up the 1989's AC button (AC long dead) to run the second fan, but even that didn't help much... that was the tip-off on that car... both cases the t-stats were fine... a rad is pretty cheap + I would get a saab t-stat if you get one, not a generic, + for the effort of changing, I would get an 82 degree (probably good to order one just to have on hand as a spare, they're cheap)...
that said, if the engine does overheat, I'd put in a new t-stat anyway, as overheating can damage them...
running an 89 degree tstat with 82 degree fan switch would just have the fan on a lot... not sure how detrimental that would be (other than potentially wearing out a fan), but the opposite of the classic temperature overshoot in cars with an 82 degree tstat and a 92 degree fan switch...
hopefully you're not driving this car (too far) on your vacation!
