as others said, price on an SPG really depends on condition... they are getting harder to find in good shape... in terms of things that are costly/time consuming/harder to fix... the big thing to look for is rust. look under carpets, fenders, shock towers, behind the front bumper, seams under the car etc... next major problem area would be the transmission...

in terms of the lower dash console (a couple bins + accessory slot)... on newer models (1990+?), the sunroof switch is already relocated into the window switch pack behind the shifter. imho this is a good thing for ease of use! I definitely prefer that in the 1993 vs the 1989... so if you need to remove that, a 1990+ car might be slightly more desirable for you?

Not sure what Subaru you've got, but I've done some long trips in Subarus + have certainly experienced the center console gouging my right leg... I can see why you'd remove it! In comparison to a Subaru, these are so much more comfortable cars! night + day... fwiw, for me, the shape of the center console in a c900 is such that they don't gouge my leg, so you might want to try driving a c900 for a bit first... but if you don't need the storage or want things like the accessory gauges (battery voltage, outside temperature, oil pressure etc), it could easily be removed...
