I've done both, fixed a dented lemans blue door and blended, and painted a rose quartz door black. The blue door was rust-free so that was a simple choice. The rose quartz door was rust-free to replace a dented and rusty black door. Fixing the door on the car puts the car down for a little while. Not a big deal if it's not your daily driver. Painting a door off the car and then installing it requires only an hour or two of down time for the car, but lots more work. Changing the color of a door takes a lot more time because you have to strip everything (hard parts) off it and clean, clean, clean every little nook and cranny that may have trapped wax, grease or dirt. Then use a scotchbrite pad to scuff the paint, then clean, clean, clean again. You also have to drill out and reinstall the rubber weatherstrip at the bottom of the door and remove and reinstall all the other weatherstrip; which requires replacing all the one-time-use little t-clips. Then, of course, you have to install the door which requires realignment of the hinges and the window glass to match how the old door was installed, and undoing and redoing the electrical harness, and changing the lock cylinder. All while trying not to scuff your new paint job. Worth it if you want a perfect door though.
