yes, you'll most probably need to bleed the system.

Fill up the reservoir up to 50%. Jack up your baby and turn the steering wheel all the way to the right and to the left. Slowly. Twice.
Start the engine and repeat the same steps keeping your eye open at the reservoir, fill it up when the level goes down.
Stop the engine, lower the car, remove the jack stands, start the engine and keep repeating all those steps above until you hear (you'll hear that) the system is bled. Remember to keep checking the power steering oil level, fill it up when necessary.

As for the hose techniques - it was pretty straight forward for me: suck up the fluid from the tank, undo the hose off the tank, get down the floor and undo the hose off the pump. As most manuals say, installation is the reverse of removal. Oh, yeah - clean up the floor! Cleaning up the engine bay in that corner where the power steering tank sits at is also a good idea when you undo the old hose.
