It sounds mostly like you have an external oil leak that isn't highly evident like a rear main seal or head gasket leak near the oil supply port at the right rear corner of the head. You should take a close look at the whole oil cooling circuit too. Those hoses and their fittings go bad when they get old and are often neglected. If you disconnected the hoses from the oil filter adapter when you re-gasketed it did you put the small o'rings on the fittings and look for old o'rings stuck up in the threaded bores? Does you oil cooler have a leak?
Water can get into the oil sump from other sources than the cooling system. If your dipstick tube is cracked it may be letting water splashed up from wet roads get in there.
