Besides a thermostat that won't open correctly, overheating can be caused by radiator issues:
1. Plugged externally (dead bugs, debris)
2. Plugged internally (corrosion from wrong/poor coolant)
3. Missing fins (in salt climates, the fins corrode away which greatly reduces the efficiency of the radiator. This is hard to see with the radiator in situ. If some fins look bad, the whole truth is likely much worse.)
Also, bypassing the heater core is fine. This is like shutting the heater valve off.
Some tips:
A. When installing the new core/valve, don't forget to hook up the mini-driveshaft from the control knob. It's easy to forget that thing when focusing on getting the inlet and outlet pipes through the firewall.
B. Two bolts on the driver's side of the core also retain the bracket for the cruise control vacuum bulb.
C. The core is sealed in the plastic housing with foam that will turn to dust during removal. This foam prevents air from leaking around the core. I think a 1/4 inch thick by 1 inch wide one-sided-self-adhesive foam strip would suffice for replacement. (Best to check on those dimensions though - it's been a while.)
