I think you're right - the only thing it does is engage the door chime relay but it *might* interact in some way with the Saab Guard alarm, but don't quote me on that.
The ignition switch does two basic things:
1. It connects the grey wire (which comes straight from the battery) to all the other circuits in the car (in the picture the white/grey, green, white/green, and red wires
2. It temporarily connects the grey wire to the starter solenoid to spin the starter "in the picture the red/yellow wire
As long as you connect grey to all other wires with a switch, you'll power everything. You just need something to momentarily connect battery to starter.
Be aware that the factory switch has "load reduction" feature which disconnects certain non-essentials when running the starter so maximum power is available to the starter. It's probably not important in 2018, but it is a factory feature.
I use this thing to test individual circuits in the car, and to start one when the key is not available. Each switch connects to a specific circuit - turn them all on, press the button, the car starts.
