My guess is that the chip is long gone by now. If it got trapped between the piston and the cylinder wall, you should be able to see a scratch or gouge. Otherwise, it probably went out the exhaust port and is wedged somewhere in the cat or out the tailpipe where it isn't doing any damage now.
The crusting on the exhaust valves sound a lot like you were getting coolant into the cylinder. I assume you were replacing the head gasket because of leaking, not because it was a slow day. If I were in your place, I would replace the suspect valves and lap the valve seats. The valves *may* be able to be cleaned up, but I wouldn't bother, and just go new. If you're going to that effort, think about lapping all the other valve seats.
I rebuilt and Alfa engine that had dropped a valve (GTV6 2.5). I ended up replacing the valves in the one cylinder that was trashed. I reused the other valves, just lapped the valve seats. Since the valves were coming out, I replaced the valve guides and seals. I made up a wooded board with holes in it, well marked, so the valves that came out of a location went back in to the same location. It wasn't that much extra work, and the engine ran just great when I was done. If you've been leaking coolant into the cylinders, it's safe to assume that all the valves will have some level of gunk.
A lot depends on what you'll be doing with the car. If you're going to be keeping it, spend a few extra hours and clean the head up nice. If you're going to be selling it, and want to keep your karma clean, do the job right. Otherwise, well, slap it on and seal it up, and hope it holds together through the test drive.
