Don't double the fabric, just fold it over about 1 inch all around the sides and about 1/2 inch around the sunroof opening. I didn't staple the headliner, but just gave it a shot of glue all around the outside of the roof form. Don't glue the fabric around the sunroof opening. Instead fold it over the sheet metal of the sunroof opening. Even though it seems like you won't be able to get the sunroof opening trim to fit, the foam compresses and the trim fits snugly.
Obviously you will have to make a relief cut at the 4 corners of the sunroof, and you might have to make cuts or fold the material at the outer corners of the headliner.
That's my experience.
