Let's see.
Yes, there was fabric there one time. It was the same fabric as the one on the headliner.
Other than the handle in the center, there is no other trim in addition to the fabric. The fabric folds over in some places and is trimmed flush in others.
Besides matching the headliner and looking more attractive than the bare fiberglass, the covering (with its foam back) keeps the sunshade from rattling.
You will have to make a personal decision as to whether it's worth replacing. To get the sunshade out you have to remove the glass sunroof panel and disassemble some of the sunroof mechanism. After you put the panel back and replace the sunroof, you have to adjust the glass in order get it to fit flush, work correctly, and not leak. If you don't feel comfortable with that, then don't attempt it.
If you are careful, it should take about 1/2 hour to get the panel out, 1/2 hour to recover it, 1/2 hour to get it back in, and 1/2 hour of sunroof adjustment time.
