1) My A/C doesn't work at all so I can't help. Mine blows as cool as the outside air gets!
2) Far left green(night)/white(day) at idle or when letting off gas. The guage does flinch when the car is not in motion and the engine is revving. You don't have boost unless the car is moving. Regular driving the needle goes back and forth from green to far right yellow. I regularly see 1/3 into red when at WOT. Never hit fuel cut off, either.
3) I needed new brakes shortly after buying my car and Jim at Sobstory.com set me up with new Zimmerman rotors, front and back, along with PBR Deluxe pads for a great price. I see no brake dust and haven't experienced noticeable fade. Metalmaster pads eat rotors so I like using organic pads. Pads are cheaper than rotors and easier to change.
4) Fan speed is regulated if you are in AUTO mode. Once you start adjusting things manually, yes you have to hold the buttons for an eternity to get them to go up or down. HI and LO are what they say. It's hard to break the habit of wanting to adjust things, but you'll manage. I now just leave it in AUTO, set at 70, and let the car take care of everything. The car uses different speeds and chooses different airways that are best suited to inside/outside temps and whether or not it is sunny or cloudy. If you have your owners manual, read up on the Automatic climate control, then it's easier to understand.
5) Check with your local auto parts store, I'm sure they have some type of cigarette lighter extension wire with receptacle that you could run back there.
'91 is a good year for 9000 turbos. Not just cause I have one.
You can poke around Quasi's website for more info on your car, too.
Good luck!
