Removing A/C and window fogging question.

Hi folks. My A/C hasn't worked properly for years, and that's ok, I prefer to roll all the windows down anyhow. What I'd really like to do is have the system completely removed and get rid of all that dead weight, plus put the IC up front with removal of the condenser. My question is, should I be able to keep the inside of the windows defogged in rainy weather, without any functional A/C? Does that never fog product you put on the inside actually work?
The reason I ask, is that in the past two years, in heavy rains, the windows do tend to fog up, but if I switch the ACC to Auto, it will tend to defog rather quickly, at least the windshield and front two windows. If I put it back to ECON, as I normally run since the compressor is toast, the windows will fog up again.
I don't smell any coolant, so I tend to not think it's the heater core, but the core IS original at 271k miles, and if it were the core, I'm a bit puzzled as to why the AUTO/ECON setting would effect it.
Thoughts?
