The "check engine" light is a signal from the cars computer that it is seeing some strange information from one of the sensors or actuators. It could be any one of a dozen of them. Being as the light is intermittent, it indicates that the problem is intermittent also.
Stop by your local friendly SAAB dealer or independant and ask them to use their scan tool and read the codes. Even though the light may not be on now, the computer should have "stored" the code or reference.
Once you know what the code is, then you can start looking for the problem. Without this information, all you can do is just keep changing parts out until you find the problem. This can get expensive, as you've already found out - how much did the O2 sensor cost? and that didn't fix it. How about an airflow meter? or a throttle position sensor?
