I really have got this sussed now.
Take the handbrake cover off (star drive; (not USS entrprise) and loosen off the two big nuts to their max. without them coming off.
Jack up one side rear, leave the wheel on and get on the floor underneath from the rear.
There is a 14 mm hex nut on the caliper just above the rubber gaiter where the handbrake cable attaches. It is short and has a copper washer but can be reused OK. Unscrew it completely.
Underneath is a port. At the bottom of the port is a worm screw which takes a 4mm Allen key.
Use the long arm of the Allen key and locate it in the worm.
Now the good bit - spin the wheel with your hand (this is why you leave the wheel on to give it some momentum) and turn the Allen key clockwise - it may take quite a few turns, but there will be a very obvious point where the brake pads engage the disc, back the Allen key off and try it again a few times to get a good feel for the bite point.
Then simply back the Allen key off about 1/4 to 1/2 turn and this is the ideal set point.
On spinning the wheel, the pads may catch very slightly on high spots or rusty bits on the disc but don't worry about this (if it catches a lot could be another problem).
Finally fine tune using the two nuts by the handbrake a re-attach the cover
Voila!

After doing this about 5 times I've got it down to about 10 minutes all done.
