On my '93 CSE, the temperature gauge normally sits at 9 o'clock whenever I'm on the open road, more or less regardless of outside temperature or whether the ACC is running (I leave it on all the time, anyway). In London traffic (which is horrendous) or when stopped for any time, it goes up to 10 o'clock pretty quickly, then the fan comes on and things stabilise. In other words, expect higher readings in traffic but it sounds a bit high for normal driving. UK temperatures are lower than yours, of course.
These gauges are quite sensitive and I understand that in later years they were made less so, because drivers were getting frightened unnecessarily! There is a whole lot of stuff round the radiator (intercooler and so forth) and it needs its electric fans.
Is the car losing coolant? Your head gasket could be on the way out. And there is never any harm in fitting a new thermostat.
