Here in the UK, I was able to call a Saab dealer, give them my registration number (licence plate) and they told me which colour my car was. If you're in the US, you might need to give the VIN number, since my impression is that the licence number of the car may change. There is a label on the rear door pillar (left side on my UK model) which carries a numerical code for the paint colour and one for the trim colour. Again, you would probably have to call a Saab dealer with this number to identify the name of the colour. Alternatively, you could post the number here and ask people who know what their colour is called to compare the number for you.
Thirdly, you could go to a shop that will let you take two retouch paints and compare them to your car (assuming the colour is visible on the pack).
I know of no site that has colour samples, although I seem to remember the Saab UK site had a "design your car" feature that showed colours. I don't know whether these two colours were still available, though.
I believe both Eucalyptus Green and Scarabe Green are dark metallic green colours (which you may know already). Looking for photographs on the Internet shows that Scarabe Green tends to have a blue tinge to it where Eucalyptus Green is very dark and very green (more the colour of a rose leaf).
