The letter rating is the speed rating. It tells you how fast you can drive the car for SUSTAINED PERIODS OF TIME. Tires get hot when they go fast. The speed rating of the tire tells you how fast the car can go and not have the tire disintegrate from the heat. Remember, that speed rating assumes hot days and heavy cars.
As Michael Smith says, a H-rated tire is good for 130. That's 130 MPH sustained. A lot will depend on your definition of 'Drive Gently'. I may be an old fuddy-duddy, but I consider driving at 130 MPH+ as not 'driving gently'. In fact, I'd consider driving at 90 MPH for sustained periods of time Not Driving Gently. Now an ordinary S-rated tire is good for 112 MPH. So unless you like racing the highway patrol, speed rating really isn't a safety concern.
Now, In General (notice caps), the higher the speed rating, the higher the performance of the tire. No guarantee here, just in general. So a lower speed rated tire may not handle quite as well. But if the tire handles to your liking, don't sweat the speed rating unless you drive REAL FAST for long periods of time. You can take an S-rated tire up over 112 MPH, just don't do it for more than a few minutes (10 or so), and don't do it on very hot days. With an H-rated tire, you will have to be really pushing it to stress the tire.
